- 2 c. white cornmeal
- 2/3 c. buttermilk
- 2 tsp. baking soda
- 1 Tbsp. flour
- 2 to 3 jalapeno peppers, chopped or 2 Tbsp. crushed red peppers
- 1/4 c. bacon grease, melted and strained
- 1 can Mexicorn or small can whole kernel corn plus 1/4 c. onion and 1/4 c. green pepper
- 1/2 tsp. salt
- 2 eggs
- 1 lb. shredded Cheddar
Directions

1Mix together soda, salt, cornmeal, flour, jalapenos, eggs, buttermilk and heated bacon grease.

2Pour 1/2 of this mixture into a skillet or pan.

3Top with Mexicorn and 3/4 pound Cheddar cheese. Layer on remaining cornmeal mixture.

4Bake at 350° for 20 minutes.

5Remove from oven.

6Top with remaining cheese.

7Return to oven for 10 minutes or until brown.
