Ingredients

  • 2 c. white cornmeal
  • 2/3 c. buttermilk
  • 2 tsp. baking soda
  • 1 Tbsp. flour
  • 2 to 3 jalapeno peppers, chopped or 2 Tbsp. crushed red peppers
  • 1/4 c. bacon grease, melted and strained
  • 1 can Mexicorn or small can whole kernel corn plus 1/4 c. onion and 1/4 c. green pepper
  • 1/2 tsp. salt
  • 2 eggs
  • 1 lb. shredded Cheddar

Directions

    Mix together soda, salt, cornmeal, flour, jalapenos, eggs, buttermilk and heated bacon grease.

    Pour 1/2 of this mixture into a skillet or pan.

    Top with Mexicorn and 3/4 pound Cheddar cheese. Layer on remaining cornmeal mixture.

    Bake at 350° for 20 minutes.

    Remove from oven.

    Top with remaining cheese.

    Return to oven for 10 minutes or until brown.
