- 1 can (14 Oz. Size) Pink Salmon
- 1/2 cups Onion, Chopped
- 2 whole Eggs
- 1 Tablespoon Parsley Flakes
- 1 Tablespoon Lemon Juice
- 1/4 teaspoons Salt
- 18 teaspoons Coarse Ground Black Pepper
- 30 whole Saltine Crackers, Crushed
- Vegetable Oil, For Frying
Directions

1Drain salmon, reserving 2 tablespoons of the liquid.

2I remove skin and bones.

3But, it is not required.

4In a large bowl flake the salmon, add 2 tablespoons liquid, onion, eggs, parsley, lemon juice, salt, and pepper.

5Mix well.

6Add cracker crumbs, and stir until all is combined.

7Shape into 8 cakes, and fry in oil, or butter until golden brown.

8Turn over and brown other side.

9May be served hot or cold.

10You may of course add Cajun seasoning, or hot sauce if you desire.
