- 1 slightly beaten egg
- 1 1/4 c. milk
- 2/3 c. fine cracker crumbs
- 1/2 tsp. salt
- 4 chicken legs or 4 thighs
- 3 to 4 Tbsp. shortening
Directions

1Combine eggs and 1/4 cup of the milk.

2Mix cracker crumbs, salt and dash of pepper.

3Dip legs into egg mixture, then roll in crumbs.

4In heavy skillet, brown chicken in hot shortening.

5Turn with tongs.

6Add remaining 1 cup milk.

7Cover tightly and simmer 35 minutes.

8Uncover and cook about 10 minutes or until tender.
