  • 4 ounces amaretti cookies, crushed
  • 4 tablespoons Amaretto
  • 4 eggs, separated
  • 14 cup superfine sugar
  • 1 cup mascarpone cheese
  • toasted slivered almonds (to garnish)

Directions

    Place the Amaretti crumbs in a bowl, add the Amaretto and set aside to soak.

    Meanwhile, beat the egg yolks with the superfine sugar until pale and thick.

    Fold in the mascarpone cheese and soaked cookie crumbs.

    Whisk the egg whites in a separate bowl until stiff, then gently fold into the cheese mixture.

    Divide the mascarpone cream among 4 serving dishes and let chill for 1-2 hours.
