- 4 ounces amaretti cookies, crushed
- 4 tablespoons Amaretto
- 4 eggs, separated
- 14 cup superfine sugar
- 1 cup mascarpone cheese
- toasted slivered almonds (to garnish)
Directions

1Place the Amaretti crumbs in a bowl, add the Amaretto and set aside to soak.

2Meanwhile, beat the egg yolks with the superfine sugar until pale and thick.

3Fold in the mascarpone cheese and soaked cookie crumbs.

4Whisk the egg whites in a separate bowl until stiff, then gently fold into the cheese mixture.

5Divide the mascarpone cream among 4 serving dishes and let chill for 1-2 hours.

6Sprinkle with toasted slivered almonds just before serving.
