- 8 large parsnips
- 1 knob of butter
- pinch freshly ground black pepper
Directions

1Peel the parsnips and cut length ways then in half.

2Bring to the boil in a pot of salted water.

3Boil for around 15 minutes or until done.

4Drain well.

5Mash the parsnips and add back into the pot.

6Add a knob of butter, a pinch of salt and the black pepper.

7Stir well.

8Stir the mash over a low heat.

9Check seasoning is to your liking.

10Serve immediately.
