- 6 medium potatoes
- 1 c. shredded Cheddar cheese
- 1/4 c. margarine
- 1 (8 oz.) sour cream
- 1/4 tsp. minced onion
- 1 tsp. salt
- 1 tsp. pepper
Directions

1Cook potatoes with skin; cool, peel and shred.

2In saucepan over low heat melt cheese with margarine.

3Stir until melted. Remove from heat and let stand at room temperature.

4Combine cheese mixture, sour cream, onion, salt and pepper.

5Fold into potatoes. Put into greased casserole dish.

6Bake at 350° for 25 minutes.
