  • 4 cups mashed potato
  • 1 egg beaten
  • 1/4 cup ricotta cheese
  • 1/4 cup Parmesan cheese grated
  • 2 tablespoons olive oil
  • 2 pie crust 9 inch, if frozen, thaw out

  • 1 tablespoon water

Directions

    Preheat oven to 350F.

    Beat the mashed potatoes, egg, ricotta, parmesan and oil together until smooth.

    Fill one pie shell with the potato mixture, and invert the other pie shell over top.

    Press down the sides to seal the pastry, and slash some vent holes on top
