Mashed Potato Pie

  • 1 or 2 large carrots, cut into 1/8-inch slices
  • 1 can peas, drained
  • 2 or 3 c. hot mashed potatoes

Directions

    Place carrot slices around the sides of a greased 9-inch pie pan, standing up around the edge so they touch.

    Cover bottom of pan with peas.

    Fill pan with mashed potatoes.

    Bake at 300° for 15 minutes.

    Remove from oven and turn upside-down onto plate. Yields 5 to 6 servings.
