Mashed Potatoes - Make-Ahead Type

  • 6 medium potatoes, peeled and quartered
  • 1/2 c. sour cream
  • 3 oz. cream cheese
  • 2 Tbsp. butter
  • 1 tsp. onion salt
  • 1/4 tsp. pepper
  • 1/4 to 1/2 c. milk

    Cook potatoes until tender.

    Drain.

    Mash potatoes and mix in sour cream, softened cream cheese, 1 tablespoon butter, onion salt and pepper.

    Gradually beat in enough milk to make potatoes fluffy and light.

    Turn into a greased 1 1/2-quart casserole.

    Cover with foil.

    Chill up to 24 hours.

    To serve, dot with remaining 1 tablespoon butter and bake, uncovered, at 350° for 45 minutes or until heated through.
