  • 2 pounds baking potatoes, peeled and cut into 3/4-inch pieces
  • 2 cups water
  • 2 bay leaves
  • 1/4 cup butter or margarine
  • 1/4 cup milk
  • 1/2 teaspoon salt

Directions

    Combine first 3 ingredients in a medium saucepan. Bring to a boil; cover, reduce heat, and simmer 15 to 20 minutes or until potato is tender. Remove and discard bay leaves. Drain potato, reserving 1/4 cup cooking liquid.

    Combine potato, reserved liquid, butter, milk, and salt in a medium bowl. Beat at medium speed of an electric mixer until fluffy.
