- 4 Tbsp. cornstarch
- 2 egg yolks
- 1 c. sugar
- 2 Tbsp. butter
- 1 1/4 c. boiling water
- 4 Tbsp. lemon juice
- 1 tsp. grated lemon rind
Directions

1Mix cornstarch and sugar, add boiling water.

2Stir and cook until no taste of raw starch.

3Beat egg yolks and add slowly to first mixture, cook over low heat until egg is cooked.

4Add butter, lemon juice and rind, cool.

5Add to baked pie shell and cover with meringue (be sure meringue touches all around the crust).
