Ingredients

  • 2 lb. ground beef
  • 1 c. applesauce
  • 1 c. bread crumbs
  • 2 eggs
  • salt and pepper to taste
  • flour (for rolling)
  • 2 Tbsp. fat
  • 1 stalk celery, cut medium size diagonal to be boiled
  • 1 carrot, sliced
  • 1 small chopped onion (to be cooked with vegetables)
  • 1 chopped green pepper
  • 2 c. tomato juice

Directions

    Mix beef, applesauce, eggs, bread, salt and pepper.

    Shape into small balls.

    Roll in flour.

    Brown in hot fat.

    Put in casserole.

    To drippings in pan, add vegetables and tomato juice. Bring to a boil and pour over meat balls.

    Cover with foil and bake at 350° for about 40 minutes to 1 hour.
