- 2 lb. ground beef
- 1 c. applesauce
- 1 c. bread crumbs
- 2 eggs
- salt and pepper to taste
- flour (for rolling)
- 2 Tbsp. fat
- 1 stalk celery, cut medium size diagonal to be boiled
- 1 carrot, sliced
- 1 small chopped onion (to be cooked with vegetables)
- 1 chopped green pepper
- 2 c. tomato juice
Directions

1Mix beef, applesauce, eggs, bread, salt and pepper.

2Shape into small balls.

3Roll in flour.

4Brown in hot fat.

5Put in casserole.

6To drippings in pan, add vegetables and tomato juice. Bring to a boil and pour over meat balls.

7Cover with foil and bake at 350° for about 40 minutes to 1 hour.
