  • 1 1/2 pounds sausage
  • 7 cloves garlic
  • 1 shallot
  • 70 ounces San Marzano tomatoes crushed
  • 3 tablespoons flour
  • 2 cups milk or almond milk non-sweet
  • 1 cup grated Parmesan cheese or Manchego
  • lasagna noodles
  • 2 pounds reduced fat ricotta cheese or cauliflower ricotta
  • 2 eggs
  • 1 cup fresh basil
  • 1 pound mozzarella cheese or buffalo mozzarella

    Brown sausage and break into tiny pieces - transfer to towel to pat dry

    add garlic (5tbsp) and shallots to the pan - stir for 2 min and add the tomatoes and bring to a boil over medium heat; simmer for ~ 1 hour

    in another pan, melt 4 tbsp butter over med-high heat and add in 2 tbsp of garlic and cook for 1 min Heat milk in the microwave ~90 sec and add to the pan

    Whisk (into the milk pan) flour, then gradually whisk in the milk and bring to a simmer until thick. Stir for 5 min and add parmesean cheese; season with salt and pepper

    Cook noodles, drain and rinse with cold water

    In a bowl, combine 1/3c parm cheese, ricotta cheese, eggs, basil, and 1/4 tsp pepper

    Grease 10x15 baking dish and coat the bottom with sauce

    Layer: noodles, sausage, 1 1/2c tomato sauce, half ricotta mixture, half white sauce, noodles, white sauce, noodles, remaining sausage, 1 1/2c tomato sauce, remaining ricotta, 1/2 mozzarella cheese, noodles, tomato sauce and mozzarella cheese

    Cover with foil and back for 1 hour @375; discard foil and bake 15 more min
