Meat-Less Tacos

Ingredients

  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • chili powder to taste
  • cumin (just a pinch)
  • 1/4 c. tomato sauce
  • 3/4 c. water
  • 1 can pinto beans, drained
  • 1 c. quick cooking brown rice
  • taco shells or tortillas
  • low-fat grated Cheddar cheese
  • shredded lettuce
  • hot sauce

Directions

    Coat a large skillet with cooking spray and heat.

    Saute the onion and garlic.

    Add chili powder to taste, a pinch of cumin, tomato sauce and water. Bring to a boil, then add beans and rice. Cover and simmer 5 minutes. Remove from heat and let stand another 5 minutes.

    Spoon into taco shells or tortillas and top with cheese, hot sauce and lettuce.
