- 1 small onion, chopped
- 2 cloves garlic, minced
- chili powder to taste
- cumin (just a pinch)
- 1/4 c. tomato sauce
- 3/4 c. water
- 1 can pinto beans, drained
- 1 c. quick cooking brown rice
- taco shells or tortillas
- low-fat grated Cheddar cheese
- shredded lettuce
- hot sauce
Directions

1Coat a large skillet with cooking spray and heat.

2Saute the onion and garlic.

3Add chili powder to taste, a pinch of cumin, tomato sauce and water. Bring to a boil, then add beans and rice. Cover and simmer 5 minutes. Remove from heat and let stand another 5 minutes.

4Spoon into taco shells or tortillas and top with cheese, hot sauce and lettuce.
