  • 2 eggs, beaten
  • 3/4 c. soft bread crumbs
  • 1/2 c. tomato juice
  • 2 Tbsp. fresh parsley
  • 1/2 tsp. oregano
  • 1/4. tsp. salt
  • 1/4 tsp. pepper
  • 1 clove garlic, minced
  • 2 lb. ground chuck
  • 8 thin slices ham (12 oz.)
  • 1-1/2 c. (6 oz.) shredded mozzarella cheese
  • Sliced cheese over top

Directions

    Combine all but the ham and cheese and mix together well. Spread the meat mixture out on a large piece of foil and roll/pat to form a 10 x 12 inch rectangle. Arrange the ham on top leaving a small margin around the edges. Sprinkle cheese over the ham. Starting from the short end, roll up loaf using the foil to lift (jelly-roll style). Place roll seam side down in a 9 x 13 inch pan. Bake at 350° for 1 hour 10 minutes. Put extra cheese on top the last 5 minutes.
