Ingredients

  • 3 slices bread
  • 1/2 c. milk
  • 1 egg
  • 1 lb. ground beef
  • 3 Tbsp. grated onion
  • 3 Tbsp. snipped parsley (optional)
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 c. tomato juice
  • 1 c. water
  • 1/2 c. chopped carrots
  • 1/2 c. chopped celery
  • 1 tsp. salt

Directions

    Soften bread in the milk.

    Beat the egg and add it.

    Mix the ground beef, onion, parsley, 1 teaspoon salt and pepper together. Combine the bread and meat mixture and form into 18 balls.

    Brown balls in skillet in 2 tablespoons hot oil.

    Drain off excess fat. Add tomato juice, water, carrots, celery and salt.

    Cover; simmer 45 minutes.

    Serve over rice, if desired.
