  • 3 to 4 cloves garlic
  • 1 sliced onion
  • 1/2 sliced green pepper
  • 1 can lo-fat, low-salt chicken broth
  • 1 can diced tomatoes
  • 2 Tbsp. drained capers
  • angel hair pasta
  • 2 skinless, boneless chicken breasts, cut into chunks

Directions

    Saute diced garlic in 1 tablespoon lite oil. Add onion and pepper.

    Saute 5 to 10 minutes. Add chicken broth and tomatoes. Let simmer 15 to 20 minutes. Add capers.

    Add chicken chunks and let simmer 15 to 20 minutes.

    Serve over nest of cooked angel hair pasta.
