Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 1/2 cups fresh mushrooms sliced
  • 1 onion chopped
  • 1 clove garlic minced
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth
  • 1/2 lemon
  • 1 tomato cut into wedges
  • 1 yellow pepper sliced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • ground pepper pinch of fresh
  • fresh parsley for garnish

Directions

    In a small bowl whisk chicken broth, juice of 1 lemon and 1 tsp mustard. Set aside.

    In a large nonstick skillet heat the olive oil , add the chicken, onion and cook for 6 min.

    Add the garlic, mushrooms, oregano, yellow pepper and cook for 6 min more.

    Add the chicken broth , season with salt and pepper and simmer for 15min or until chicken is tender.

    Remove from heat, top with tomato wedges , sprinkle with fresh parsley and feta cheese( optional ) and Serve.
