  • 1 c. diced english cucumber
  • 1 c. chopped seeded tomato
  • 1/2 c. crumbled feta cheese
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 8oz package 7 grain pilat
  • 1 7 oz container hummus
  • 3 Mediterranean style white flatbreads

Directions

    1. Combine first 8 ingredients in a bowl. Spread hummus evenly over each flatbread. Spoon pilaf mixture evenly over half of ea. flatbread and fold flatbread over filling. Cut each sandwich in half and serve immediately
