Meliton Casserole

Ingredients

  • 2 large bell peppers
  • 2 large onions
  • 1 bunch green onions
  • 1/3 c. chopped parsley
  • 3 toes fresh garlic
  • 1 stick margarine
  • 2 lb. cleaned shrimp, cut in half
  • 3 c. Progresso bread crumbs
  • black pepper and salt to taste
  • 8 c. meliton, boiled, peeled and mashed

Directions

    Chop fine the bell peppers, onions, green onions, parsley and garlic.

    Fry in margarine until transparent.

    Add cleaned shrimp. Cook for 5 minutes.

    Add pulp from cooked meliton (about 8 cups). Continue to cook.

    Add Progresso bread crumbs.

    Pour in baking dish and bake at 400° until done.

    Boil melitons before peeling, until a fork can pierce.
