- 2/3 c. whipping cream
- 1 Tbsp. warm melted shortening
- 1/4 tsp. oil of peppermint

Directions

1Melt the 1 pound chocolate in the top of a double boiler over hot water.

2Remove from heat as soon as it is fully melted.

3In a small saucepan, bring whipping cream to a boil; measure the temperature with a candy thermometer.

4Let whipping cream cool to about 150°, about 1 minute.

5Pour the warm, melted chocolate into a large mixing bowl; add melted shortening and mix well.

6Add flavoring to hot cream; add the hot cream at one time to the chocolate.
