  • 180 grams butter
  • 1/3 cup icing sugar
  • 1 tsp vanilla essence
  • 1/3 cup cornflour
  • 1 cup flour
  • 60 grams butter
  • 1/2 cup icing sugar
  • 2 tsp passion fruit essence

Directions

    Preheat the oven to 180 C. Prepare a baking tray with baking paper and set aside.

    In a bowl, using electric beaters, beat the softened butter with icing sugar and vanilla essence until smooth and creamy.

    Sift the cornflour and flour into the mixture and combine into a dough.

    Take a spoonful of the mixture about 3 or 4 centimeters wide and roll into a ball in your hand.

    Place on the baking tray and press down with a fork so it flattens to about 1.5 cm thick.

    Once your tray is full, bake in the oven for 15 minutes.

    Cool the cookies completely on a wire rack before filling them.

    For the filling : in a bowl, beat the butter and icing sugar.

    Add the passion fruit and combine.

    Taste the filling and add more passion fruit if you like.

    Spoon a teaspoon of filling onto a biscuit and sandwich onto another biscuit.
