- 8 boiled and peeled meltons
- 1 c. sugar
- 1 Tbsp. vanilla
- 1 c. Bisquick
- 1 stick butter
- 2 eggs, beaten
- 1 c. coconut
Directions

1Melt butter; set aside.

2Beat 2 eggs and add to butter.

3Add sugar, vanilla and coconut.

4Beat until smooth.

5Add Bisquick; beat again by hand until smooth.

6Add meltons and mix.

7Pour into 8-inch or 9-inch pie pans.

8Bake at 350° or until middle of pie is done after testing with a toothpick.

9Cool for at least 1 hour. If using 8-inch pie pan, this will make two pies.

10A 9-inch pan will make one.
