Melton Pie

Ingredients

  • 8 boiled and peeled meltons
  • 1 c. sugar
  • 1 Tbsp. vanilla
  • 1 c. Bisquick
  • 1 stick butter
  • 2 eggs, beaten
  • 1 c. coconut

Directions

    Melt butter; set aside.

    Beat 2 eggs and add to butter.

    Add sugar, vanilla and coconut.

    Beat until smooth.

    Add Bisquick; beat again by hand until smooth.

    Add meltons and mix.

    Pour into 8-inch or 9-inch pie pans.

    Bake at 350° or until middle of pie is done after testing with a toothpick.

    Cool for at least 1 hour. If using 8-inch pie pan, this will make two pies.

    A 9-inch pan will make one.
