Ingredients

  • 1 cup emmer farro or Kashi
  • 1 bunch chard, chopped medium
  • 1 bunch kale, chopped medium
  • 1/2 cucumber, peeled and diced
  • 1 tomato, diced
  • 1 carrot, diced
  • 1 lemon - juiced (about 1/4 cup)
  • 1 clove garlic, minced
  • 1 teaspoon dried dill or 2 teaspoons chopped fresh
  • 1/2 teaspoon dried basil, or 1 teaspoon chopped fresh
  • Salt
  • Pepper
  • 1/4 cup olive oil

Directions

    Cook farro or Kashi per instructions and cool. (May have to soak farro overnight.)

    Create dressing by mixing together lemon juice, garlic, dill, basil, salt, pepper and olive oil.

    Toss other ingredients with dressing to taste.
