Mex-Asian Corn Salad

  • 4 large ears leftover, or cooked & cooled corn on the cob
  • 1/2 t. sesame oil
  • 1 T. canola, or other neutral oil
  • 1 t. rice vinegar
  • juice from 1/2 lime
  • 1/2 t. salt
  • 1/4 t. cayenne pepper
  • 3 thinly sliced scallions
  • 2 T. chopped cilantro

Directions

    Slice corn off cobs (break in half, place cut side down, then slice), mix all ingredients into corn. Allow to chill for at least two hours.
