- 4 large ears leftover, or cooked & cooled corn on the cob
- 1/2 t. sesame oil
- 1 T. canola, or other neutral oil
- 1 t. rice vinegar
- juice from 1/2 lime
- 1/2 t. salt
- 1/4 t. cayenne pepper
- 3 thinly sliced scallions
- 2 T. chopped cilantro
Directions

1Slice corn off cobs (break in half, place cut side down, then slice), mix all ingredients into corn. Allow to chill for at least two hours.
