- 2 1/2 to 3 lb. cut up fryer
- 2 Tbsp. butter
- 1/2 c. onion, chopped
- 1 garlic clove, minced
- 1 (8 oz.) can tomato sauce
- 3/4 c. chicken broth
- 1 Tbsp. vinegar
- 1/4 tsp. chili powder
- dash of salt
- 1/2 c. sliced stuffed green olives
- 1 green pepper, cut in strips
Directions

1In skillet, brown chicken in butter; remove chicken.

2Add onion and garlic to skillet; cook until lightly browned.

3Add remaining ingredients except green pepper.

4Return chicken to skillet and spoon sauce over all.

5Cover; simmer 30 minutes.

6Add green pepper and cook 10 minutes more.

7Serve with rice.
