Ingredients

  • 2 1/2 to 3 lb. cut up fryer
  • 2 Tbsp. butter
  • 1/2 c. onion, chopped
  • 1 garlic clove, minced
  • 1 (8 oz.) can tomato sauce
  • 3/4 c. chicken broth
  • 1 Tbsp. vinegar
  • 1/4 tsp. chili powder
  • dash of salt
  • 1/2 c. sliced stuffed green olives
  • 1 green pepper, cut in strips

Directions

    In skillet, brown chicken in butter; remove chicken.

    Add onion and garlic to skillet; cook until lightly browned.

    Add remaining ingredients except green pepper.

    Return chicken to skillet and spoon sauce over all.

    Cover; simmer 30 minutes.

    Add green pepper and cook 10 minutes more.

    Serve with rice.
