Mexican Beef Bake

  • 1 lb. ground beef
  • 2 Tbsp. chili powder
  • 1 c. mild taco sauce
  • 1 (4 oz.) can chopped green chilies, drained
  • 1 can corn
  • 1/2 tsp. salt
  • 1/4 c. scallions
  • 1 c. black olives
  • 1 c. Monterey Jack cheese
  • 1 c. tortilla chips
  • 1/2 c. sour cream

    Cook beef; stir in chili powder.

    Cook for 1 minute.

    Remove from heat.

    Stir in taco sauce, green chilies and salt.

    Combine corn and 1/2 of scallions.

    Layer 1/2 corn mixture, 1/2 beef, 1/2 olives and 1/2 cheese.

    Repeat layers.

    Bake, covered, in a 2-quart casserole for 20 minutes at 400°.

    Top with crushed tortillas, sour cream and remaining scallions.
