  • 1 medium (2 lb.) chicken
  • 1 can Ro-Tel chilies (or less depending on personal taste)
  • 1 can cream of mushroom soup
  • 1 bag Doritos (Ranch or other)
  • 1 medium green pepper
  • 1/2 lb. Velveeta cheese
  • 1 can cream of chicken soup
  • 1 c. chicken broth
  • 1 medium onion

Directions

    Boil and bone chicken.

    Cut into bite size pieces.

    Line bottom of 9 x 13-inch pan with chicken.

    Put diced onion and green pepper on top of chicken.

    Add salt and pepper.

    Microwave all liquids (soups, chilies and broth).

    Cut cheese on top of chicken.

    Crush 1/2 bag of Doritos by hand and layer on top of cheese; pour liquids over top and add rest of crushed Doritos. Bake at 350° for 30 minutes.
