Mexican Corn Bread

  • 1 1/2 c. corn meal
  • 2 eggs
  • 1 c. milk
  • 1/4 c. oil
  • 1 (16 oz.) can creamed corn
  • 2 jalapeno peppers
  • 1 onion
  • 1 clove garlic
  • 1 1/2 lb. cheese, grated
  • 1 lb. ground beef

Directions

    Brown ground beef with onion, garlic and pepper.

    Drain well. Mix corn bread, eggs, milk and oil.

    Add creamed corn.

    Pour half of bread mixture in greased 9 x 13-inch pan.

    Add beef mixture, then grated cheese, then the remainder of the bread mix.

    Bake in 400° oven until brown.
