Mexican Corn Bread

  • 1 c. corn meal
  • 2 eggs, beaten
  • 1 c. milk
  • 1/2 tsp. soda
  • 3/4 tsp. salt
  • 1 (No. 303) can cream-style corn
  • 1/2 c. bacon drippings
  • 1/2 lb. ground meat
  • 1 large onion, chopped
  • 1/2 lb. cheese, grated
  • jalapeno peppers (to please your family)

Directions

    Grease a large skillet.

    Heat and sprinkle a layer of meat in skillet; saute and let it brown slightly.

    Drain.

    Pour in 1/2 of the batter, then meat, next onion and finally pepper.

    Pour remaining batter on top and bake 45 minutes to 1 hour in a 350° oven.
