Mexican Corn Bread

  • 2 eggs
  • 1 c. sweet milk
  • 1 c. corn meal
  • 1 can creamed corn
  • 1/4 c. oil
  • 1 lb. ground beef
  • 1 large onion
  • 1/2 lb. shredded Cheddar cheese
  • 1 small can green chile peppers

Directions

    Brown ground beef and onions, drain.

    Mix in chile peppers. Mix corn meal, milk, eggs, creamed corn and oil.

    Pour 1/2 of batter in 9 x 13-inch pan.

    Place meat, onions and pepper on top of batter.

    Sprinkle with cheese.

    Pour remaining batter in.

    Bake 50 minutes to 1 hour at 350°.

    (Reduce heat to 300° for electric oven and check at 45 minutes.)
