Mexican Corn Bread

Ingredients
- 1 lb. ground beef
- 1 large onion, chopped
- 3 to 4 jalapeno peppers, chopped
- 2 eggs, beaten
- 1 c. corn meal (yellow, plain)
- 1 tsp. salt
- 1/2 tsp. baking soda
- 1 c. milk
- 1/8 c. oil (Wesson or Crisco)
- 1 can cream-style corn (medium)
- 1/2 lb. grated sharp cheese
Directions

1Saute beef, onion and peppers. Drain well and set aside.

2Mix together corn meal, salt and soda. Add eggs, oil, milk and corn. Grease a large iron skillet (cold).

3Pour 1/2 of the batter in skillet. Add meat mixture and top with cheese.

4Pour remaining batter on top. Bake at 350° for 1 hour or until brown on top. (Start in cold oven.)
