Mexican Corn Bread

- 1 1/2 c. self-rising meal
- 3 eggs, beaten
- 2/3 c. cooking oil (1/3 c. for bread, 1/3 c. for skillet)
- 1 c. buttermilk
- 1 c. cream-style corn (8 oz. can)
- 1 large hot pepper, chopped
- 1/2 large bell pepper, chopped
- 1 c. sharp cheese, grated
Directions

1Mix the corn bread part; add all other ingredients, except cheese and 1/3 cup oil.

2Put this 1/3 cup oil in large skillet and add half of corn bread mixture.

3Cover with half the grated cheese; put the remaining corn bread in next and sprinkle with remaining cheese.

4Bake in 375° oven until golden brown and bread is done, about 45 to 60 minutes.
