Mexican Corn Bread

  • 1 c. yellow corn meal
  • 2 eggs, well beaten
  • 1 c. milk
  • 1/2 tsp. soda
  • 14 1/2 oz. can cream-style corn
  • 1/2 c. cooking oil
  • 1 lb. hamburger
  • 1 large onion, chopped
  • 1/2 lb. Cheddar cheese
  • 2 jalapenos

Directions

    Mix first 6 ingredients to make corn bread and set aside. Saute hamburger and set aside.

    Grate Cheddar cheese and set aside.

    Oil a 9 x13-inch baking dish.

    Pour in half of corn bread mixture.

    Sprinkle with meat, then cheese, onion and finally jalapenos.

    Pour on remaining corn bread mixture.

    Bake at 350° for 45 to 50 minutes.

    Cool slightly and cut into squares to serve.
