Mexican Corn Bread

  • 1 lb. ground beef
  • 1/2 lb. shredded Cheddar cheese
  • salt to taste
  • 4 jalapeno peppers, chopped (optional)
  • 1 c. corn meal
  • 3 eggs, beaten
  • 1/2 tsp. salt
  • 1 c. milk
  • 1 small onion, grated
  • 1 (17 oz.) can cream-style corn

Directions

    Season beef with salt and saut in heavy skillet.

    Drain; set aside.

    Combine cheese, corn meal, salt, onion and peppers in large bowl; mix well.

    Stir eggs into milk.

    Add to dry ingredients and stir just to moisten.

    Spoon half of batter into greased 2-quart casserole.

    Place beef over batter and top with remaining batter.

    Bake at 350° for 45 minutes or until done. Yields 6 to 8 servings.
