  • 1 c. self-rising corn meal
  • 1/4 c. self-rising flour
  • 1 can whole kernel corn, drained
  • 1 medium onion, chopped
  • 3/4 c. Cheddar cheese
  • 2 eggs
  • 1/3 c. corn oil
  • 3/4 c. milk
  • 1 bell pepper, chopped

Directions

    Combine flour and corn meal; add eggs, corn oil and milk to dry ingredients.

    Blend well.

    Add the other ingredients and stir well.

    Pour into greased cast-iron skillet and bake at 250° for 1 hour or until golden brown.
