  • 3 c. self-rising meal
  • 1 can creamed corn
  • 1/4 c. sugar
  • 1 2/3 c. buttermilk
  • 3 eggs
  • 1 lb. Longhorn cheese
  • 1/2 c. oil or stick margarine
  • 1 onion
  • 1/3 c. dried green pepper
  • 1/2 tsp. red pepper

Directions

    Preheat oven to 425°. Stir corn, sugar, buttermilk, oil, cheese, pepper and onion. Beat eggs with fork; add to mixture. Add corn meal, red pepper, stir. Pour into well-greased pan. Bake until done.
