- 1 (15 oz.) can creamed corn
- 1 (8 oz.) sour cream
- 2 eggs
- 5 to 6 strips cooked bacon, crushed
- 1/3 c. vegetable oil
- 1 1/2 c. cornmeal mix
- 2 jalapeno peppers, diced
- 2/3 c. Cheddar cheese
Directions

1Mix together corn, oil, sour cream, eggs and cornmeal.

2Pour half of the mixture into heated cast-iron skillet.

3Put peppers, bacon and cheese on top of mixture in skillet.

4Pour remaining cornmeal mixture on top and cook 40 minutes at 325°.
