- 1 1/2 c. sweet milk
- 1 Tbsp. sugar
- 1 tsp. salt
- 1/2 tsp. black pepper
- 2 c. self-rising cornmeal mix
- 2/3 c. cooking oil
- 1/2 c. chopped onion or 3/4 c.
- 1 (12 oz.) can Mexicorn
- 2 chopped jalapeno peppers (seeds and all)
Directions

1Beat eggs; add milk, sugar, salt and pepper.

2Mix in cornmeal, oil, onions, peppers and corn.

3Bake at 400° for 30 minutes in oblong pan.
