  • 3 eggs
  • 1 1/2 c. sweet milk
  • 1 Tbsp. sugar
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 2 c. self-rising cornmeal mix
  • 2/3 c. cooking oil
  • 1/2 c. chopped onion or 3/4 c.
  • 1 (12 oz.) can Mexicorn
  • 2 chopped jalapeno peppers (seeds and all)

    Beat eggs; add milk, sugar, salt and pepper.

    Mix in cornmeal, oil, onions, peppers and corn.

    Bake at 400° for 30 minutes in oblong pan.
