- 2 1/2 c. cornmeal
- 1/2 c. flour
- 1 small can creamed corn
- 2/3 c. Wesson oil
- 2 eggs
- pinch of baking soda
- 1/2 jalapeno pepper or to taste, chopped
- shredded Cheddar cheese
Directions

1Mix cornmeal, flour, creamed corn, Wesson oil, eggs, baking soda and jalapeno in large mixing bowl.

2Mix well.

3Pour 1/2 cornbread mixture into an 8-inch skillet.

4Cover mixture with shredded cheese.

5Pour remaining mixture on top.

6Bake at 375° until golden brown.
