Mexican Cornbread

  • 3 pkg. Jiffy cornbread mix
  • 3 eggs
  • 1 can cream-style corn
  • 2 bunches green onions
  • 1 large carton sour cream
  • 2 bell peppers (medium)
  • 1 lb. cheese, grated
  • 2 regular onions
  • 1 lb. ground meat
  • jalapeno peppers (optional)
  • garlic
  • chili powder
  • salt and pepper

Directions

    Mix the first 5 ingredients in a large mixing bowl.

    Saute meat with chopped regular onions, bell peppers, jalapeno peppers, garlic, chili powder, salt and pepper.

    Put small amount of oil in 2 sheet pans and put layer of cornbread, layer of meat and layer of cheese on top with another layer of cornbread.

    Bake in a 450° oven for 45 minutes.
