- 2 eggs
- 1 small can Mexicorn
- 1 medium onion, grated
- 1/2 lb. cheese, grated
Directions

1Mix all ingredients except cheese.

2Pour 1/2 mixture into prepared skillet.

3Spread cheese over this.

4Add remaining mixture over cheese.

5Bake as you would cornbread.

6If you would like cornbread to be hot, add 1 to 2 pods of hot pepper.
