Ingredients

  • 1 c. self-rising cornmeal
  • 1 c. self-rising flour
  • 1/2 to 1 c. onions
  • 1 (7 oz.) can yellow creamed corn
  • 1/2 tsp. sugar
  • 2/3 c. oil
  • 2 eggs
  • 1 1/2 c. grated cheese
  • 1 to 1 1/2 c. milk
  • 1/4 to 1/2 tsp. cayenne red pepper

    Combine cornmeal and flour.

    Mix well.

    Add 1/2 to 1 cup onions.

    Add creamed corn, sugar, eggs, grated cheese, oil and cayenne pepper.

    Add milk.

    Mix well with spoon.

    Pour into greased pan.

    Bake at 350° for 1 hour or until golden brown.

    Let set one hour before serving.
