- 1/2 c. cooking oil
- 1 c. yellow creamed corn
- 1 1/2 c. self-rising cornmeal
- 1/2 c. chopped onion
- 1 c. buttermilk
- 2 eggs
- 2 to 3 jalapeo peppers, chopped
- 2 c. grated Cheddar cheese
Directions

1Combine oil, corn, cornmeal, onion, buttermilk, eggs, chopped peppers and 1 cup cheese.

2Put in greased, hot, large iron skillet and sprinkle 1 cup cheese on top.

3Bake at 350° for 45 minutes.
