  • 1 1/2 c. self-rising cornmeal
  • 1 c. buttermilk
  • 3 eggs, beaten
  • 1/2 c. cooking oil
  • 1 tsp. grated onion
  • 1 c. cream-style corn
  • 1/2 large sweet pepper, grated
  • 2 tsp. grated hot pepper (optional)
  • 1 c. grated sharp Cheddar cheese

Directions

    Mix all ingredients together except cheese.

    Pour half of the batter in greased skillet; sprinkle cheese over the batter.

    Pour rest of batter over cheese.

    Cook at 375° for 1 hour or until golden brown.
