- 1 1/2 c. self-rising cornmeal
- 1 c. buttermilk
- 3 eggs, beaten
- 1/2 c. cooking oil
- 1 tsp. grated onion
- 1 c. cream-style corn
- 1/2 large sweet pepper, grated
- 2 tsp. grated hot pepper (optional)
- 1 c. grated sharp Cheddar cheese
Directions

1Mix all ingredients together except cheese.

2Pour half of the batter in greased skillet; sprinkle cheese over the batter.

3Pour rest of batter over cheese.

4Cook at 375° for 1 hour or until golden brown.

5Yields 10 to 12 servings.
