- 1 c. buttermilk
- 2 eggs, beaten
- 1/3 c. vegetable oil
- 3/4 tsp. baking soda
- 1/2 tsp. salt
- 1 medium grated onion
- 1 hot green pepper, grated (seeds removed)
- 1 small can cream-style corn
- 1/2 lb. grated Cheddar cheese
Directions

1Preheat a heavy, cast-iron skillet or baking dish (well-greased).

2Mix all ingredients together in large bowl.

3Pour 1/2 the batter in heated dish.

4Sprinkle with cheese.

5Spoon remaining batter over cheese.

6Bake at 375° for 35 to 45 minutes.
