- 2 1/4 c. meal mix
- 1/4 c. sugar
- 1/2 c. egg substitute or 4 egg whites
- 1/2 c. unsweetened applesauce
- 1 (8 1/2 oz.) can creamed corn
- 1/2 tsp. crushed red peppers or two jalapeno peppers, diced
- 1/4 c. onion, diced
- 1/4 c. red pepper, diced
Directions

1Mix in bowl the egg, applesauce, corn, peppers, onion, jalapeno peppers and sugar.

2Add corn mix.

3Stir just until blended (mixture will be thick).

4Pour into hot greased iron skillet.

5Bake at 375° in preheated oven for 45 to 55 minutes. Insert toothpick in center. Bread is done when toothpick comes out clean.
