- 2 eggs, slightly beaten
- 1 (No. 2) can cream-style corn
- 1/3 c. cooking oil
- 1 c. buttermilk
- 1 c. corn meal
- 1 1/2 tsp. salt
- 3 tsp. baking powder
- 1 small can hot chili peppers
- 1/2 lb. sharp Cheddar cheese, grated
Directions

1Mix slightly beaten eggs, corn, cooking oil and buttermilk. Sift together corn meal, salt and baking powder.

2Add to egg mixture.

3Pour half the batter into greased baking dish.

4Put layer of cut up hot chilies, then layer of cheese over batter.

5Add remaining batter.

6Cheese may be sprinkled over top.

7Bake 25 minutes in 450° oven.

8Yields 10 to 12 servings.
