- 1 c. yellow cornmeal
- 1/3 c. all-purpose flour
- 2 Tbsp. sugar
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 2 eggs
- 1 c. buttermilk
- 1/2 c. cooking oil
- 1 can cream-style corn
- 1/3 c. chopped onion
- 2 Tbsp. chopped green pepper
- 1/2 c. shredded Cheddar cheese
Directions

1In mixing bowl, combine cornmeal, flour, sugar, baking powder and baking soda.

2Combine remaining ingredients and add to dry mix; stir only until moistened.

3Pour into a greased 9-inch square pan or 10-inch skillet.

4Bake at 350° for 30 or 35 minutes or until golden brown.

5Yields 8 to 10 servings.
