  • 1 c. buttermilk
  • 1/2 c. vegetable oil
  • 1 can creamed corn
  • 1 can chilies, chopped
  • 1/2 c. Cheddar cheese, grated
  • 1/3 c. chopped onion
  • 1 c. cornmeal
  • 1/3 c. flour
  • 2 Tbsp. sugar
  • 1 tsp. salt
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda

Directions

    In a mixing bowl, combine eggs, buttermilk, oil, corn, chilies, cheese and onion; blend well. Add dry ingredients, stirring only until moist. Bake in a 10-inch skillet at 350° for 35 minutes.
